ARVEE GREEN BEANS

ARVEE GREEN BEANS

2 Tbsp. butter

1 large clove garlic pressed or minced

16 oz. frozen; or fresh green beans, tipped and cut into halves or thirds cooked til crisp/tender.

1 small onion sliced thin and halved

1/2 each red bell pepper and yellow bell pepper sliced very thin, cut in 2 inch pieces

1 jalapeno pepper seeds and ribs removed to eliminate heat, sliced very thin

coarse salt and freshly ground pepper

1 Tbsp. good quality Olive oil for drizzling

hot pepper flakes (optional)

Method:

Melt butter in a skillet and add garlic. Saute over low for 1 iminute. Do not brown.

Add green beans, peppers, and onion. Mix, cover skillet and braise over low heat for 10 minutes stirring often. Remove cover and raise heat to medium. Saute, mixing for another 5 minutes or til vegetables are crisp/tender. Do not overcook.

Drizzle 1 tbsp. olive oil over all and sprinkle with hot pepper flakes.
