CHICKEN THIGHS WITH GRAPE TOMATOES

6 chicken thighs, skinned if you prefer

Dredge the thighs in a combination of 3/4cup flour, 1 Tbsp. chicken seasoning, or Mrs. Dash's orginal seasoning, 1 Tbsp. cajun seasoning and 1 Tbsp. paprika, 1 tsp. salt, fresh ground pepper.

  Brown on both sides in olive oil and butter 3 min. per side. Remove to a platter.

ADD: 1 onion thinly sliced, 2 cloves garlic minced, 1/2 lb. sliced mushrooms and saute for about 5 minutes over med/low heat.

ADD: 12 cup chicken broth, 3/4 cup white wine, 1 Tbsp. chicken demi-glace or bouillon. (I use Better Than Bouillon.) Bring this to a boil.

Return chicken thighs to the pan and add: 4 or 5 sprigs FRESH Thyme and 5 or 6 FRESH sage leaves. Reduce heat and simmer for about 2 minutes.
