1 1/4 lb ground beef (chuck is great for this)
1 hot or mild Italian sausage casing removed
1/2 cup uncooked rice
1 small onion finely chopped
1 tsp. garlic powder
1 Tbsp. Cajun or similar seasoning
2 tsp. Mrs. Dash's Original seasoning
1 tsp. salt and freshly ground black pepper
3 Tbsp. finely chopped Italian parsley
1/4 cup fresh breadcrumbs
2 Tbsp. milk
2 Tbsp. Sweet/Hot sauce or a combination of 2 tsp. brown sugar and 2 Tbsp. Worchestershire, Tiger or Pick-a-peppa sauce.
1 Tbsp. ketchup
4 Sweet Bell Peppers, different colors for presentation
SAUCE:
1 28 oz. can diced or crushed tomatoes
1 tsp. Cajun seasoning
1 tsp. Mrs. Dash's seasoning
1 tsp. Worchestershire or Pick-a-peppa or Tiger sauce
METHOD:
Mix and saute all ingredients (except bell peppers and sauce ingredients ) in 2 Tbsp. vegetable oil. Fill peppers loosely and place in a casserole dish or Dutch oven deep enough so peppers stand.
Heat sauce ingredients and pour over and around peppers. Cover and bake in a 350 degree oven, for about 1 1/2 hours.
This can be made in a slow cooker on high for 2 hours then on low for 3 or 4 hours.
