PINEAPPLE/COCONUT DELIGHT Serves 4

4 to 5 cups or more fresh pineapple cut into chunks

4 Tbsp. butter

1/2 cup brown sugar

2 Tbsp. rum (optional)

4 lg. scoops coconut ice cream, sorbet or gelate.

Melt butter over low heat in a saucepan. Add brown sugar and stir well til completely mixed. Add pineapple (or whatever fruit you're using) and cook slowly, stirring, til tender about 3 to 5 minutes. 

Add rum and heat over very low heat for 30 seconds.

Divide fruit into dessert glasses. Cool for a couple of minutes, top with ice cream and drizzle remaining syrup over the ice cream.  

If you choose, you can sprinkle with toasted coconut.
