SOPA DE FIDEO    (Tomato based soup with chipotles and fideo) 4-6 servings

1  1/2   lb. pork loin, pork chop or pork steaks cut into juilienne

2  Tbsp. olive oil

1  28 oz can tomatoes

1  medium onion quartered

3  cloves garlic peeled and smashed

1  large or 2 small chipotle peppers in adobo sauce - more if you like

8  cups chicken broth

2  Tbsp. tomato paste

salt and pepper to taste

GARNISH:

1/2  cup or more finely chopped FRESH cilantro

4 to 6 lime wedges 

broken tortilla chips

METHOD:

Place the julienned pork in a heavy saucpot or Dutch Oven with olive oil and saute til browned. Meanwhile, place the onion, tomatoes, chipotle peppers, and garlic in a food processor pulsing til somewhat smooth.

Add the mixture to the pork then add tomato paste. Bring this to a boil then add chicken broth. Reduce the heat to simmer, cover and cook for 30 minutes. Season with salt and pepper.

Ladle into bowls and top with cilantro, lime juice and tortilla chips.
