CUCUMBER AND TOMATO SUMMER SALAD
Serves 8


2 cucumbers, unpeeled and unseeded sliced thin

5 scallions sliced thin

3 Tbsp. minced fresh Italian flat leaf parsley

1/4 cup sour cream or plain Greek yogurt

1 Tbsp. mayonnaise

3 Tbsp. finely chopped fresh dill

1 1/2 Tbsp. Apple Cider vinegar ( or rice vinegar)

1 tsp. sugar

1/2 tsp. salt

1/4 tsp. pepper

1/2 tsp. prepared yellow mustard

1 Tbsp. milk to thin if needed

2 or 3 small tomatoes, seeded and chopped in small dice

METHOD:
Combine the cucumbers, parsley and scallions
In a small bowl, combine the sour cream, mayonnaise, vinegar, dill, mustard, sugar, salt and pepper. Add milk if too thick. Blend well.
Pour dressing over cucumbers and toss well to coat. Divide among 8 salad plates or serve as a side dish.
