ARUGULA AND APPLE SALAD WITH ORANGE VINAGRAITE Serves 4

3 cups arugula roughly chopped
1 cup fresh baby spinach roughly chopped
1 very small shallot, thinly sliced
1/2 cup dried cranberries or dried cherries
1/2 cup toasted walnuts chopped
1 small Granny Smith or Honey Crisp apple, unpeeled and cut into 1 inch dice
4 oz. crumbled good quality Blue cheese or Roquefort cheese

3 sliced smoked bacon (applewood smoked preferred) cooked til almost crisp and cut into 1 inch pieces. Reserve 1 Tbsp. drippings. Set aside.

Place all salad ingredients except bacon in a salad bowl and mix to blend.
Toss with vinagraite dressing then add bacon pieces.

ORANGE VINAGRAITE
3-4 Tbsp. apple cider vinegar
1 Tbsp. maple syrup
2 Tbsp. orange zest
1/4 cup orange juice
1/2 tsp. salt
1/4 tsp pepper

Whisk all ingredients together in a small bowl then add
1/2 cup olive oil.
1 Tbsp. reserved bacon drippings (optional)
Whisk again then toss into the salad. Add chopped bacon pieces and serve.
