SPICY GARLIC AND LEMON OR LIME SHRIMP 3 to 4 servings
1 Tbsp. butter
1 Tbsp. olive oil
1/4 onion chopped
1/2 tsp. hot pepper flakes
1 tsp. lemon zest*
1/2 tsp. cajun style seasoning or smoked paprika (optional)
2 cloves garlic finely chopped
3 Tbsp. dry white wine
20-26 large shrimp (about 26-30 per lb.)
1 lg. ripe tomato seeded and finely chopped
salt and pepper to taste
1 Tbsp. lemon juice*
1/4 cup chopped FRESH parsley*
lemon slices to garnish
METHOD:
Combine the butter and olive oil in a large. heavy saute pan and heat over medium heat. When butter is melted add the pepper flakes and the onion.
Saute for about 2 minutes til the onion is soft. Sprinkle with smoked paprika or cajun seasoning.
Add lemon zest, tomatoes, garlic and wine. Saute for another 2 minutes.
Add the shrimp and cook for about 2 minutes on each side or til they turn pink. Season with salt and pepper, and add 1 Tbsp. lemon juice. Cook for 1 more minute.
Sprinkle with parsley, plate and pour any liquid onto the plates. Serve with lemon slice.
* Subsititute chopped FRESH cilantro for the parsley and substitute lime zest and juice for the lemon.
