STRAWBERRY SAUCE
2 cups strawberries cut in half
3 - 4 Tbsp. sugar or Agave Nectar
1 tsp. lemon juice
Place strawberries in a food processor and blend until smooth but still has texture. Place berries in a saucepan and add the sugar and lemon juice.
Simmer for about 10 minutes over low heat until thick. Set aside and cool completely.
This will keep in the refrigerator for about 1 week.
Spread room temperature ricotta cheese, cream cheese, mascarpone or Greek yogurt onto a toasted frozen or homemade waffle (or French Toast if you prefer). Top with the strawberry sauce.
This is great in a smoothie with bananas, yogurt, milk and ice cubes. Blend til smooth.
Spoon this sauce over vanilla ice cream then top with whipped cream
