CELERY and PEA SUMMER SALAD 2 to 4 servings
2/3 cup celery sliced 1/4 inch thick - about 3 stalks
2/3 cup dried cranberries or dried sweet cherries
2/3 cup frozen green peas thawed, ( I prefer petite peas)
2 large radishes sliced thin
4 Tbsp. finely chopped fresh parsley
3 Tbsp. mayonnaise more or less as you prefer
2 Tbsp. plain Greek yogurt or sour cream
1/4 cup or more chopped pecans or walnuts toasted
2 Tbsp. fresh lemon juice
1 tsp. honey or sugar
1 tsp. salt
1/4 tsp. black pepper
1/2 cup chopped or sliced cooked chicken breast (optional)
Mix mayo, yogurt or sour cream and honeyin a small bowl. Add all other ingredients into the dressing and blend well. Chill in the fridge for at least 30 minutes covered .
