OYSTERS PORTOFINO Serves 2

 

2 tbsp. olive oil

1/4 cup sliced green onions

1/4 cup chopped fresh parsley

1  garlic clove minced

1/3  cup dry breadcrumbs seasoned with Italian seasoning

1/4 cup grated FRESH Parmesan cheese

2 Tbsp. fresh lemon juice

1/8 tsp. cayenne pepper or Cajun spice

salt and freshly ground black pepper

8 to 12  raw  oysters on the half shell  

Heat oil in a skillet and add onions, garlic and parsley. Saute over low heat for 2  minutes stirring often. Do not brown.

Remove from the heat and stir in Italian bread crumbs, Parmesan cheese, lemon juice, salt and black and cayenne peppers. 

Spread oysters on baking sheet, use crinkled foil to keep oysters in place and spoon the breadcrumb mixture equally over the oysters.

Bake at 450 for 7-8 minutes or til the golden brown.  Watch carefully. 

Remove, sprinkle with additional parsley and lemon juice.
